What you're creating is called "collages" and it's usually associated with scrapbooking. Look for scrapbook software for Macs.
For true photo editing, Adobe Photoshop Elements v6 has just been released for Macs. PSE is the best photo editing tool for amateur photographers, especially if you're shooting RAW. The RAW converter is powerful and fast.
